Cheesy Loaded Potatoes

A simple and tasty potato recipe without much ingredients!

Ingredients

  • 2 large potatoes
  • 2 yellow onions
  • 5 white button mushrooms
  • Shredded ham (optional)
  • Shredded cheddar & mozzarella cheese
  • Salt, cayenne pepper, olive oil, and dried parsley flakes

Instructions

  • Wash the potatoes and dry them. Then make holes all over the potatoes using a fork before adding olive oil and salt to them.
  • Roast the potatoes for an hour in a preheated oven of 200°C. You can also turn them upside down after 30 minutes.
  • While the potatoes are in the oven, chop mushrooms and onions into small pieces and stir-fry them until they become brown. Add shredded ham and stir fry them too. Then add salt and cayenne pepper to season.
  • When the potatoes are ready, scoop the inside of the potatoes out and put them in a bowl while keeping the roasted potato skin in shape. Add cooked ham, onions, and mushrooms into the bowl and mix them all well. Add shredded cheese and more seasoning if you prefer.
  • Then scoop the mix and put it back into the potato skins, top them with more cheese, and roast them in the oven for another 10 minutes.
