Suggestions for making peanut butter cookies with almond milk?

So I've only recently begun actually cooking for the first couple months in my life, things like salmon and steak. By which I mean I'm very new to cooking and possibly am making huge mistakes.

Last week I decided I wanted to try to make cookies. I tried a couple recipes I found online for peanut butter cookies. Eggs, sugar, peanut butter (Skippy natural with honey), flour, baking soda, almond milk, and butter was my last attempt and the batter was definitely tasty.

But the cookies keep ending up very hard, the texture is always very off and very rough. The cookie never tastes as good as the batter, when they don't expand and merge together into like pancakes. I've seen videos on Youtube about how to make cookies, and there people can mold the batter into little balls. I've never managed that, they're always too runny, even when I put them in the fridge for several hours. They always stick to the pan. Admittedly I don't have non-stick pans or the special paper, but I've been putting olive oil and butter on the plate, which helps it stop stick but also tends to make the cookie greasy. I wonder also how much of this is due to using a microwave oven?

I figure I have to be making a lot of mistakes, so I'd appreciate any guidance into if it's possible to make a decent cookie how I've been trying or if this is very mistaken and how I rectify it. Thank you so much for your time and Happy Wednesday!
