Hey y'all,
This is an excellent fig preserves recipe if your fig tree (or grocery store) is dropping figs like crazy this time of year, like mine.
For those of y'all who prefer video: Easy Fig Preserves Recipe No Pectin
Ingredients:
- 2lbs ripe figs (remove stem, cut into 1/4's or 1/8's, depending on preference of size)
- 1/4 cup sugar
- 1/4 cup water
- 1 Lemon's juice
- 1 tsp. Vanilla Extract
- Toss everything BUT the water into a medium sized pot on Medium heat
- Stir constantly until the sugar dissolves and the figs begin to soften
- Reduce heat to a low simmer and add the water
- Cook for 15-20 minutes until you're happy with consistency. (Keep in mind, it'll thicken significantly when cooled so don't look for firm jelly texture yet)
- While still warm, spoon into a mason jar or whatever container you prefer. (check consistency preference)
- Let it cool on the counter until room temp, then store in the fridge. Stays good for roughly 2 months.
