It does not get easier than this. I love this quick and simple meal when I am just making dinner for myself and I don't want to get too many dishes dirty.
Ingredients (For one Serving):
- 2oz. pasta of choice (I like penne)
- 1 cup chopped broccoli
- 1 oz. Goat Cheese (I like to use Garlic & Herb for extra flavors)
Cook your preferred amount of pasta. Using a colander on top of the pasta pot, steam the broccoli while the pasta is cooking. Remove the colander and drain the pasta, reserving 1/4 cup of pasta water. Add the pasta and broccoli back to the pot. Add your preferred amount of goat cheese to the pot and stir, adding in the pasta water to create a light sauce. Add salt and pepper to taste.
This is great as is for a really simple dinner, but if you have them on hand you can punch up the flavor by adding: minced garlic, fresh or dried herbs, red chili flakes, etc.
