Vegetarian tart recipe idea. Appetizer of the day!

If you have been hoarding puff pastry from Trader Joe’s at the bottom of your freezer…..I have a very simple idea or an appetizer for you. This dish checks all the boxes, it is easy to make, vegetarian ( however you can add bacon to it as you wish ), great as a lunch, party dish and it looks and tastes amazing.

Ingredients:

Puff pastry - 1 sheet ( I am using the one from Trader Joe’s )

Extra virgin olive oil - 2 tbsp

Chili pepper ( or flakes ) - 1 pcs

Leeks ( thinly sliced ) - ½ cup

Tomatoes ( thinly sliced ) - ½ cup

Jimmy nardello or any sweet peppers ( thinly chopped ) - ½ cup

Cheese ( shredded ) - ½ cup ( use combination of cheeses like Mozzarella or Gruyere )

Salt & pepper - to taste

Thyme - 1 sprig

Optional:

Bacon - ½ cup

Cooking steps:

  1. Thaw puff pastry dough. Using a sharp knife make 1 inch cut along the perimeter of the dough ( but don't cut all the way through the dough ). Make a few holes with the fork in the middle so the dough doesn’t puff up in the middle while baking.
  2. Infuze olive oil with the spicy flavor by heating oil on the stove with the chili pepper inside. Get it to boil and turn off the stove after a few minutes. Let oil cool down.
  3. Cover the puff pastry inside the rectangle with the cheese, chopped tomatoes, leeks and peppers. Add some thyme on top. Season it with the salt and pepper to taste and sprinkle infused olive oil on top.
  4. Bake puff pastry for 16-18 minutes at 350°F or untill puff pastry starts to turn golden brown.

Serve it right away.
