This is a very simple recipe of amazing lemon cake with olive oil. This cake is very fluffy, light, moist, not too sweet, and requires no cooking or baking skills to make it. Since olive oil is one of the main ingredients in this recipe, use a very high quality oil.
List of ingredients:
All purpose flour - 1 ½ cup
Extra virgin olive oil ( use high quality oil ) -
Baking soda - ½ tsp
Baking powder - 1 tsp
Kosher salt - ½ tsp
Eggs - 3 pcs
Sugar - 1 cup
Buttermilk - 1 cup
Lemon juice ( from one lemon ) - ¼ cup
Lemon zest - from 2 lemons ( ~4 tbsp )

Cooking steps:
- In a medium size bowl mix flour, baking soda, baking powder and salt. Mix it well together.
- In a larger bowl add olive oil, granulated sugar and 3 eggs. Whisk it all well together. Now, add buttermilk, lemon zest and lemon juice. Mix it all well together.
- Add ingredients from the smaller bowl to the larger bowl and mix it all together until combined and flour is incorporated into the mixture.
- Pour mixture into the baking pan. I am using a non-stick springform baking pan which will make it easier to release the cake when baked.
- Bake cake in a preheated oven at 325°F for about 50 min. Use a toothpick to check if it is ready.
- When cake cools down, sprinkle it with the powder sugar on top ( you can make a nice decoration on top using paper strips, check out my video for details )
Additional notes: instead of powder sugar you can create glaze by mixing:
Icing sugar - ⅓ cup
Lemon juice - 2 tbsp
Also, you can top it off with more lemon zest.
