Easy and Simple Salmon, Soba and fried vegetables recipe

Today I wanted to share an easy recipe for salmon and soba with fired vegetables.

Serves 2 people maybe 3. Takes about 30 minutes to cook.

For the ingredients we need about

200gramms of Salmon

150 grams soba noodles

some vegetable oil for frying

For vegetables I used

A Carrot

A Bell pepper paprika

About 250gramms of fresh green beans, I used runner beans

fresh chili peppers for some heat

and as spices I used a mixture of

Garlic powder

Onion powder

Ginger powder

Soy sauce

rice vinegar

and honey

For the Garlic and ginger powder, it would be better to use fresh garlic and ginger and grind them into paste yourself. The same goes for the onion powder, fresh onions add while frying the other vegetables would be better than powder.

First we fill a pot with some water, lightly salt it, put it on the stove and bring it to a boil. While the Water must heat up we can put a pan on the stove as well add some vegetable oil and set the stove for the pan to medium heat. Now we take out the Salmon and give it a little wash and remove any unwanted parts. After that dry the salmon filet with some paper towels and season it with salt and black pepper.

By now the oil in the pan should be hot so we can add the salmon in with the skin side down. While the salmon is in the pan make sure that you flip it around once the skin got a nice brown to dark brown tone.

We proceed with the green beans, give them a scrub. After that we could add them to the pot with hot water but cutting the bean in their raw state is easier so you can also chop off the ends, cut the beans into bite sized pieces and then add them to the water. Once the beans are in the pot the need to boil for at least 10 min to make them eatable.

While the beans are cooking, and salmon is frying we can take care of the other vegetables.

Starting with the bell pepper chop of the head, remove the core, and then slice the bell pepper into thin strips.

For the carrot we want stripes as well so peel it and cut of the ends. Then use the peeler to peel of stripes from the carrot. When you do this make sure you go a little bit slower and try to get the stripes as thick as possible. If the carrot stripes get to thin they will burn easily.

The last thing we got to chop is the chili, after chopping the chili be mindful of what you touch if don’t use gloves.

By now the salmon should be done so put it aside. The next step for me was to wait until the beans are done. So, I can add them with the other vegetables to the pan. And fry them at the same time. Once the beans where done drain the water and put them aside. I rinsed the pot with water and then filled the pot again with water. This time for the soba noodles. Put the refilled pot on the stove again and salt the water.

While the water is heating we can start frying the vegetables. Add the bell pepper, green beans, and the carrots stripes to the pan, if there is still oil in the pan good. if not add some. Fry them lightly for a short while and make sure to stir them occasionally. Once they are done set the pan aside.

In the meantime, we got to watch the pot with water. once the water start boiling we can add the soba noodles. Make sure that you keep track of time for the soba noodles. Don’t over cook them. about 3 minutes in boiling water should be enough. But as with every other type of noddle taste them, if their core is still hard give them like 30 seconds more and test again.

While the soba noodles are cooking, and the vegetables are frying we can mix a glazing sauce. I mixed 4 teaspoons of soy sauce, 1 teaspoon of rice vinegar, halve a teaspoon of ginger, garlic and onion powder and a teaspoon of honey together. Mix it well and add it to the pan once the vegetables are done. After that take the pan of the stove.

Once the Soba noodles are done, drain the water, add the noodles to the pan and stir them. Now we are almost done. Last thing to do is to portion the salmon, I wanted bite sized pieces in between the vegetables and noodles so I tore the cooked salmon apart and added it to the pan. And with that we are finished.
