Amazingly moist fried rice, not too greasy, but well-seasoned and fragrant! My comfort food for a busy or lazy day, cheap but perfect for everyone. I also include tips to make plump juicy, and crunchy shrimp like restaurant-quality 🦐

Ingredients:
- 8-10 shrimps & 4 eggs (Feel free to add any leftover or available toppings like carrot, beans, corn, sausage,...)
- 2-3 Cups left-over overnight rice (dry rice is the best for fried rice)
- Marinade: Salt, light soy sauce, sugar to taste, sesame oil, scallions,...

- Brine the shrimp in a baking soda solution (1 tsp Sugar + 1/2 tsp Baking Soda) before you cook for about 15-30 mins for the plump juicy, and crunchy texture (Restaurant tip!). Rinse well under cold water, pat dry with a towel paper.
- Pan-fry shrimp over medium heat, 1-2 mins each side or until shrimp turns pink and take out. Don't overcook!
- Add the eggs, scrambling them until they’re 80% cooked.
- Add the rice and stir well, so the rice is well-coated with egg. Cook over high heat until the rice dries up and 'jumps' around in the pan.
- Season with salt, light soy sauce, sugar, sesame oil to your taste.
- Add other toppings, scallions to release the aroma. Add shrimp and stir for another 15s, then your fried rice is ready!
