Move over charcuterie board; butter boards are the latest trend! Butter boards are super easy to make, less expensive than cured meats and cheeses, perfect for appetizers or large gatherings, and absolutely delicious!
Making the perfect butter board takes minutes, so I also show you how to make butter at home! Making butter is also really easy, so don't be afraid to give it a go yourself! Plus the leftover buttermilk keeps well in your freezer and is great for making scones, pancakes or pound cake!
If you don't like butter, these toppings would go great with goats cheese!

INGREDIENTS
100g (1/4 cup + 3 tbsp) butter**
1/2 fig
2.7g (1 tsp.) sumac
6.5g (1 tbsp.) chopped walnuts
21g (1 tbsp.) runny honey
11g (2 tsp.) salt
a handful of edible flowers
a few sprigs of lemon thyme
a baguette or rye bread, to serve
This butter bread recipe serves 3-4 people.
**If you want to make your own butter, you'll need 600ml (2.5 cups) double cream (heavy cream). This will make approximately 300g (1 1/4 cups + 2 tbsp) butter and 250ml (1 cup) buttermilk!

METHOD
- Let's make our butter! If you don't want to make homemade butter and you have butter at hand, skip to step 4! Pour 600ml (2.5 cups) double cream (heavy cream) into a mixing bowl and whisk until the cream has overwhipped and begins to separate. I'd recommend using either a stand mixer or an electric whisk. You'll struggle to do this by hand!
- You'll see a milky liquid in and around the butter; this is buttermilk. Squeeze the butter mixture together by hand, into a block, squeezing out as much buttermilk as possible. I like to wash my butter in a large bowl of water to help remove any excess buttermilk. You can use the buttermilk in pancakes, scones or pound cake - or freeze it for another time!
- You'll now have a block of unsalted butter. You can add salt to this to create salted butter, or feel free to add cheeses, herbs, spices to your butter ...
- Let's make our butter board! Spread 100g (1/4 cup + 3 tbsp) butter across a wooden board with a flat knife. I like to add little swirls to the butter base, just to make it look pretty! Next, sprinkle on 11g (2 tsp.) salt and 2.7g (1 tsp.) sumac. The sumac has a sour lemony flavour and pairs wonderfully with the figs!
- Next, take a few sprigs of lemon thyme and remove the thyme from the stems. Sprinkle the lemon thyme onto your butter board.
- Chop 6.5g (1 tbsp.) walnuts into small chunks, slice 1/2 fig into thin crescents and add these to your butter board. Drizzle 21g (1 tbsp.) of runny honey over all of your toppings and finish with a handful of edible flowers - I'm using violas.
- And serve with a beautiful baguette or rye bread!!
The idea of butter spread across a board may not sound inviting, but it's absolutely delicious and super customisable! If you don't like any of the ingredients above, leave them out!
