Clean Keto Red Wine Braised Brisket

INGREDIENTS

  • 1- 5lb Brisket 
  • 2 tbsp avocado oil
  • 2 large onions, thickly sliced
  • 3 celery stalks
  • 5 garlic cloves, smashed
  • 6 sprigs thyme
  • 2 bay leaves
  • 1- 28 oz can whole peeled tomatoes
  • 1 tbsp tomato paste
  • 1 750 ml bottle of full-bodied red wine
  • 1 cup cranberries
  • salt
  • pepper

  1. Preheat the oven to 350º. Season brisket with salt and pepper. Heat oil in a large dutch oven. Cook brisket, turning occasionally until browned all over, 8-10 minutes. Pour off fat and discard.
  2. Place onions, celery, garlic, thyme, bay leaves, tomatoes, tomato paste, and wine in a pot and stir to combine. Season with salt and pepper. Place brisket on top, fat side up. Cover and braise in the oven, spooning juices, onions, and tomatoes over brisket every 30 minutes until the meal is form tender, 3-3 1/2 hours.
  3. Uncover the pot, and pour in cranberries, cook until tender, about 30 minutes. Remove brisket from the pot and slice against the grain to serve.
