Easy Garlic and Olive Oil Pasta

This garlic and olive oil pasta is a classic and simple dish that is perfect for a quick and easy weeknight meal or a cosy dinner at home. The dish is made with al dente pasta, tossed with fragrant garlic, extra-virgin olive oil, and a sprinkle of red pepper flakes for a subtle kick of heat. The addition of grated Parmesan cheese adds a rich and savoury flavour, while a garnish of fresh parsley gives the dish a pop of colour and freshness. This flavourful and satisfying pasta dish is perfect for any pasta lover who appreciates the beauty of simplicity in cooking.

Ingredients:

  • 8 oz. pasta (spaghetti, linguine or any pasta of your choice)
  • 3-4 cloves of garlic, minced
  • 1/4 cup extra-virgin olive oil
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • 1/4 cup grated Parmesan cheese
  • Chopped parsley (optional)

Instructions:

  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente.
  2. While the pasta is cooking, heat the olive oil in a large skillet over medium heat.
  3. Add the minced garlic and red pepper flakes (if using) to the skillet and sauté for about 1-2 minutes, stirring constantly, until the garlic is fragrant and lightly golden.
  4. Remove the skillet from heat and set it aside.
  5. Drain the cooked pasta and reserve about 1/2 cup of the pasta water.
  6. Add the pasta to the skillet with the garlic and olive oil.
  7. Toss the pasta with the garlic and oil until it is well coated.
  8. If the pasta seems dry, add a little bit of the reserved pasta water to the skillet to create a sauce.
  9. Season the pasta with salt and pepper to taste.
  10. Sprinkle the grated Parmesan cheese over the pasta and toss to combine.
  11. Serve the pasta hot, garnished with chopped parsley (if using).
