No added sugar banana bread

Preheat oven to 325°f

2 cups of mashed ripe bananas 2 eggs 2tsp vanilla extract 1/4 cup vegetable oil (or canola, or coconut)

Mix together, set aside

1 & 3/4 cup all purpose flour 1/4 tsp salt 1 tsp baking soda

Whisk the dry ingredients together

Add to wet and fold in just until the flour is incorporated

(You can add cinnamon, walnuts, pecans, raisins etc, however much you want. I added a packet of Splenda but next time i might add 2. Also chocolate chips would be good but that defeats the “no sugar added”)

Add mixture to a bread loaf pan that has been greased or sprayed

Bake for 45-55 minutes

Allow to cool for 15 min

I sprinkled a little cinnamon sugar ontop just for fun, once again that cancels out the “no sugar added” but I felt fine knowing that it was only 1/4 tsp maybe vs however much you’d typically add into banana bread.
