I say Greek-inspired because this is in no way authentic, but it captures some of those flavors when you're craving it.
Meatball Ingredients:
-1 lb ground turkey
-1/2 cup bread crumbs or a heel of bread crumbled up well
-Large Egg
-1/2 cup feta
-OPTIONAL: 1/2 cup shredded zuchinni - this adds more moisture to the meatballs, but if you don't have it, they taste fine without!
-Seasonings - salt, pepper, paprika, garlic powder, onion powder, chives (~1/2 tsp each, leave out what you don't have)
>Mix above ingredients together. Cook a tiny piece of the meatball mix to check for seasonings and add more salt/pepper if needed.
>Form into 1 inch meatballs. Cook a few minutes on each side over medium-high heat in a frying pan with a little bit of olive oil to sear.
>Either turn heat down, add a little water in the pan and cover for ~7 min to steam and cook through, or if you want to save time you can pop them in the microwave for about 2 minutes on a plate with a paper towel underneath them.
Dressing Ingredients:
-1/2 cup sour cream or plain yogurt
-1/2 cup diced cucumber
-1/4 cup diced tomato
-1/4 cup minced cilantro or mint
-1-3 cloves minced garlic (you want it to be pretty garlicky)
-OPTIONAL: 1/4 cup red onion
-Salt and pepper
Mix all above together.
Serves ~4. I serve with spinach and rice (I'm a fan of instant rice for time saving!), topped with the meatballs and dressing. Squeeze some lemon or lime into the rice if you have it and add a drizzle of olive oil if you're feeling fancy. Would be good with pita too! The dressing also tastes great as a dressing on salads.
