Quick Homemade Scallion Oil Noodles

This is a noodle dish that I love to make for a satisfying, savory dish. Naturally allergen-free for everything except soy (just substitute the noodles you need.)

Ingredients: - Ramen/rice noodles (about 1 cake of ramen noodles per person)

  • Chopped scallions (1-2 per ramen cake depending on personal taste)

  • Diced garlic and/or ginger

  • Neutral oil (peanut, vegetable) - olive oil is fine too

  • Soy sauce/Tamari (GF)

  • Brown sugar

  • Sesame oil and Sriracha (garnishes)

  1. Boil water in a saucepan to cook a cake of ramen noodles according to the packaged instructions. (I use these, they are about $2 a cake.

  2. Strain noodles when cooked and lower stove heat to sauté temperature. Rinse the saucepan with a bit of lukewarm water in sink to bring the temperature down.

  3. Add oil and wait for the pan to reach an appropriate sauté temperature if necessary. Add scallions and ginger if using and sauté for 2-3 minutes until fragrant. Add garlic and sauté for another 2ish minutes until white scallions are slightly translucent and the mixture is fragrant.

  4. Combine soy and brown sugar in small bowl to dissolve the sugar.

  5. Add noodles back to the pan and mix in the soy mixture. Garnish with sesame oil and hot sauce.
