A recipe from my Acadian grandmother. One of her most popular "party" dishes, and often requested by guests and family.
Meatball Ingredients:
2 pounds ground beef
1 egg, slightly beaten
1 sweet onion, grated
salt and pepper, to taste
Sauce Ingredients:
1 (12 ounce) bottle chili sauce
1 (10 ounce) jar grape jelly
2 tablespoons light brown sugar
juice from 1 lemon
Instructions:
Preheat oven to 400 degrees Fahrenheit.
Line a baking sheet with foil. Top with a baking rack and coat with cooking spray.
Mix Meatball Ingredients in a large bowl, gently, until just combined. Use a small cookie scoop to form meatballs. Place on prepared baking sheet/rack and put in oven. Bake until browned and cooked through, about 20 - 30 minutes (ovens vary, so cook time will vary).
While meatballs are cooking, add Sauce Ingredients to a large saucepan. Bring to a simmer, stirring often, until warmed through.
Add baked meatballs to sauce and stir until coated evenly. Serve warm.
*For an appetizer, place a toothpick in each meatball and serve on a decorative tray (my beloved Memere favored her "Rooster" tray).
*For supper, serve with egg noodles and vegetables of your choice. Mixed, roasted veggies are my personal preference.
