This Thai salad is refreshing, healthy, and easy-to-make!
Ingredients
•18 ounces pork (tenderloin or shoulder, bite-sized pieces)
•4 tablespoons lime juice (2 x 2 tablespoons)
•1⁄8 cups water
•1 tablespoon white sugar
•2 tablespoons fish sauce
•1.8 ounces lemongrass (sliced thinly)
•3 kaffir lime leaves (sliced into thin strips)
•3 chilies (to taste)
•1⁄3 cups coriander
•1⁄3 cups mint
•1⁄3 cups green onions
Instructions

Combine pork slices with 2 tablespoons of lime juice in a mixing bowl.

Then, add water to a pot over medium heat. Add the pork and let it simmer until thoroughly cooked.

Transfer the pork slices to a mixing bowl once cooked. Add white sugar, fish sauce, and the remaining lime juice. Mix thoroughly until the meat is well coated with the flavoring ingredients.

Add the remaining ingredients to the mixing bowl and gently mix. Serve immediately.
