Beef and Broccoli Stir-Fry

Ingredients

•2 tablespoons oil

•2 cloves garlic (chopped)

•9 ounces beef

•2 tablespoons oyster sauce

•1 tablespoon light soy sauce

•1 teaspoon white sugar

•1 ⁄2 teaspoons dark soy sauce

•1 broccoli (cut into bite-sized pieces)

For The Marinade

•1 tablespoon cornstarch

•1 egg white

•1 tablespoon oyster sauce

•1 tablespoon sesame oil

Instructions

  1. Slice the beef in thin slices against the grain. Then, add the slices to a large mixing bowl and marinate with cornstarch, egg white, sesame oil, and oyster sauce. Make sure every meat piece is well coated with the sauce. Let the marinade rest for at least 30 minutes or overnight in your refrigerator.

  2. Cut the broccoli into small, bite-sized pieces. You can choose to steam, boil, or to grill the broccoli. Grilling it adds an extra BBQ flavor to the vegetable, you can do this over charcoal or in a grilling pan over low heat.

  3. Heat a non-stick pan or skillet over medium heat. Add oil and fry the garlic until golden. Optionally add sliced chilies in this step.

  4. Add the marinated beef slices and cook until nearly cooked through (rare or medium-rare).

  5. Mix in the seasonings: oyster sauce, light soy sauce, dark soy sauce, and white sugar. Make sure all ingredients are thoroughly combined before continuing.

  6. Toss in the broccoli and continue to cook until it reaches your desired texture. I like mine crisp, so I only briefly cook it. Serve immediately.
