I've always been a midwestern comfort food type cook, which for me means lots of casseroles, grilling, and instant pot recipes. A couple years ago I started doing a lot of Mexican dishes and this past year have been trying to master Asian.
I'm am really intrigued by Indian food but have only tried in restaurants twice the two "rookie" dishes, Butter Chicken (I found boring) and Chicken Tikka Masala (good but not great). It could have been I went to bad restaurants as we have mostly Nepal people also selling Indian dishes in my area.
So what are your suggestions to help me fall in love with Indian food? Should I keep trying restaurants first until I find dishes I want to create at home or do some of you have some dished that blew you away the first time you had them. BTW, I can take some decent heat like in Mexican food but I have been told Indian heat is on a whole other level. Thanks for any help.
