Description
Pasta in a vinaigrette sauce with cheese and fresh vegetables.
This “Pasta Vinaigrette” recipe is easy to whip up, loaded with nutrients, and perfect as a Vegetarian dish, or as a wonderful complement to a meat entree such as Chicken, Pork or Lamb.
Ingredients
- 2 Cups Pasta (ex. Penne)
- 32 Oz Chicken Broth
- 1/2 Tsp Garlic Powder
- 1 Tbsp Dried Parsley

1/2 Tbsp Butter

1 Cucumber (Sliced)

1 Tsp Sea Salt
-
1/4 Onion (Rectangles)

1 Tbsp White Wine Vinegar

1 Tbsp Olive Oil
-
2 Tbsp Kalamata Olives
-
1/2 Tbsp Dill (Dried)
-
1/2 Tsp Red Pepper Chili Flakes
-
1/2 Cup Shaved or Shredded Parmesan or Romano Cheese.
Instructions

Bring Chicken Broth to a vigorous boil. (Do NOT add salt).

Add Pasta to Broth and return to boil stirring regularly. (12 Min).

Slice a Cucumber and add to a bowl. (NOT in broth).

Add Salt to Cucumber. Mix well. (TIP: Let sit a couple minutes).

Cut Onion into bite size rectangular pieces and add to Cucumber.

Add Vinegar to Cucumber mixture. Mix well. (TIP: Let sit several minutes).

Add Olive Oil to Cucumber mixture. Mix well. (If mixture is too oily add more Vinegar. If mixture is too sharp add Olive oil).

Cut Kalamata Olives into halves and add to Cucumber mixture.

Add Dill and Red Pepper Chili Flakes to Cucumber mixture.

Add Cheese to Cucumber mixture. Mix well.

When Pasta is done cooking, drain completely.

Pour extra liquid from Cucumber mixture onto Pasta.

Add Butter to Pasta.

Add Garlic Powder and Parsley to Pasta. Mix well.

Plate Pasta and top with Cucumber salad.
Enjoy by itself or with bread, wine, and/or a meat such as Chicken, Pork, or Lamb.
