Grilled Fish Tacos with Pineapple Salsa in 30 Minutes

Will you fire up the grill in your weeknights? If you do, try this easy weeknight dinner made in 30 minutes!

Ingredients:

2 Tilapia Filets (or other white fish)

2 Tbsp of Olive Oil

BBQ Rub

Pineapple Salsa Ingredients:

1 Cup of Diced Pineapple

¼ Red Onion (diced)

¼ Cup Chopped Cilantro

Preparation:

  1. Preheat your grill with all burners on High.

  2. Coat the fish filets with olive oil.

    Season both sides of the fish liberally with rub. Set aside to prepare salsa.

  3. Combine pineapple, red onion, and cilantro in a medium-sized bowl.

  4. Place the fish filets directly on the grill grates and cook for 3 minutes on each side.

  5. Add corn tortillas to the grill and heat for 1-2 minutes on each side depending on desired crispness.

  6. Break or chop the fish into small pieces.

  7. Assemble tacos with fish, salsa, and desired sauces.
