Hi Everyone
I want to share my recipe for Greek potatoes because I can.
4 cloves of fresh garlic (chopped)
1 brown onion (sliced)
4-6 medium potatoes (quartered)
400g tinned tomatoes
Olive Oil
Oregano (however much or little as your heart desires)
Bay Leaves (handful)
Water
Feta
Use a wide bottomed saucepan that can be covered with a lid.
1.Pour olive oil into the pan until the entire bottom is covered (plus a touch extra)
-
Cook the onion and garlic on high until they are soft.
-
Add the potatoes, tinned tomatoes, and however much oregano feels right for you. Mix through.
-
Add a handful of bay leaves on top and add water to the pan until the potatoes are completely submerged.
-
Cover and simmer until the potatoes are soft. 45 minutes to an hour depending on potato size.
-
Serve with feta cheese and eat it hot or cold. Just add the feta. Trust me.
