Ingredients:

  • 2 tbsp olive oil
  • 1 onion
  • Pinch of salt 
  • 1 green bell pepper
  • 1 red bell pepper
  • 3 garlic cloves
  • 1 small cabbage
  • 1 serrano chile or jalapeño
  • 14.5 oz / 411g chopped tomatoes with juice
  • 6 eggs
  • 1/2 tsp cayenne
  • 1/2 tsp coriander
  • 1/2 tsp cumin
  • 1/2 tsp caraway seeds
  • Salt, Pepper to taste
  • fresh parsley or cilantro
