What is a great, easy recipie to make if you want to eat the same meal everyday?

I have a very limited sense of smell/taste so I don't really care that much about food. The only thing I care about is that the texture is not too mushy. I also hate cooking, and due to my autism I prefer sticking to the same daily schedule most days when it comes to the stuff I do to survive. This also helps me focus on my creative pursuits. As such I always walk the same route every day for exercise and I wash my clothes and clean my house the same time every day (or the same day every week). I want to do the same thing for my cooking/eating habits as this is a major cause of stress for me right now.

I want to limit my cooking time to what is necessary, and I want an easy meal which I can eat every day with plain white rice as a side (which I have with every meal from my rice cooker). This is mainly for dinner, as for breakfast I always have weetabix or porridge (plain with a bit of salt) with a banana for the side. For lunch I have a chicken sandwich but I'm thinking of changing this to a smoothie. For supper I have two slices of brown toast with peanut butter. If I have a snack throughout the day, I will have grapes, oranges, or dried dates. I occasionally have treats (bacon, alcohol, etc.), but for the most part my breakfasts, lunches, and suppers are the same. I want to have a standard dinner/main meal that I can make most if not every day which will sustain me in a healthy way.

I have an oven, slow cooker, and air fryer. I would prefer something I can just dump in a slow cooker, without having to cook things at different times, with my rice as a side. I prefer chicken over any other meat, but like beef too. I’ve tried dumping chicken thigh cutlets in with a bunch of vegetables, stock, and canned tomatoes but most vegetables became mushy. I can’t put things in at different times as I am at work during the day.

The recipe must be easy and quick to prepare, with no ingredients I can’t easily get in a small town.
