Creamy Mushroom and Mustard Chicken recipe:

Ingredients:

  • 2 chicken breasts
  • 1 tbsp butter
  • 200g mushrooms (Portobellini/Chestnut), sliced
  • 1 garlic clove, minced
  • 1 tbsp wholegrain mustard
  • 100ml double cream
  • Salt and black pepper

Method:

  1. Heat butter in a pan over medium heat.
  2. Season chicken with salt and pepper, cook for 5 minutes per side until golden and cooked through. Set aside.
  3. In the same pan, sauté garlic for 1 minute, then add mushrooms and cook until soft.
  4. Stir in double cream and mustard.
  5. Return chicken to the pan, mix well, and simmer for 2-3 minutes until the sauce thickens.
  6. Garnish with herbs and serve with mashed potatoes, peas, rice, or crusty bread.
