Tuna Spaghetti al Limone

Super easy to make with mostly pantry ingredients (I keep some handy most of the time in case of emergencies)!

Tuna Spaghetti al Limone

Ingredients

  • 500 g Wholemeal Spaghetti
  • 4 cloves garlic (thinly sliced)
  • 1 brown onion (diced)
  • 6 anchovy fillets (salted, in olive oil)
  • 610 g canned chunks tuna in olive oil
  • zest of 2 lemons
  • juice of 2 lemons
  • 4 tsp fresh parsley (plus extra for garnish, chopped)

  • parmesan cheese (shaved, to serve)

  • baby capers (to serve)

  • optional - chilli flakes (to serve)

Instructions

  1. Prepare spaghetti as per packet instructions
  2. Meanwhile, drain the oil from the tinned tuna into a pan and turn heat to high
  3. Add the onion and heat for 3 minutes or until onion begins to brown
  4. Add the garlic, anchovies, and tuna, and heat for an additional two minutes - stir frequently to prevent sticking to the pan
  5. Take off of heat and combine tuna mixture with lemon zest, lemon juice, parsley, and drained pasta
  6. Serve with parmesan, capers, extra parsley, and chilli flakes if desired
