Super easy to make with mostly pantry ingredients (I keep some handy most of the time in case of emergencies)!
Tuna Spaghetti al Limone

Cook Time: 15 mins
Ingredients
- 500 g Wholemeal Spaghetti
- 4 cloves garlic (thinly sliced)
- 1 brown onion (diced)
- 6 anchovy fillets (salted, in olive oil)
- 610 g canned chunks tuna in olive oil
- zest of 2 lemons
- juice of 2 lemons

4 tsp fresh parsley (plus extra for garnish, chopped)

parmesan cheese (shaved, to serve)

baby capers (to serve)

optional - chilli flakes (to serve)
Instructions
- Prepare spaghetti as per packet instructions
- Meanwhile, drain the oil from the tinned tuna into a pan and turn heat to high
- Add the onion and heat for 3 minutes or until onion begins to brown
- Add the garlic, anchovies, and tuna, and heat for an additional two minutes - stir frequently to prevent sticking to the pan
- Take off of heat and combine tuna mixture with lemon zest, lemon juice, parsley, and drained pasta
- Serve with parmesan, capers, extra parsley, and chilli flakes if desired
