Whitebean/Spinach/Sun Dried Tomatoes and Cream!

We make this at least 2 or 3 times per month because it's amazing and so fast. Put some sundried tomato oil in a skillet, saute 1 onion, 2 cloves of garlic and some dried oregano. Add in 1/2 to 1 jar of sun dried tomatoes, 1 can of rinced white beans (we like cannelini best), and enough fresh spinach to overwhelm the pan (it will shrink, won't be too much/will be delicious. Drizzle with 1/2 to 1 cup of heavy cream. It's a fairly healthy meal that's super fast and feels really decadent. Crusy bread to dip in is a great final touch, and sometimes we add a little Better than Boullion.
